[New aspects of non-waste use of secondary raw materials of horse breeding in Yakutia].

The research focuses on the efficient use of all parts of the Yakut horse, a breed popular in Yakutia, beyond just meat for a waste-free approach in horse breeding. The researchers studied the composition of secondary products like fat, blood, and by-products, and found significant nutritional value in them.

Investigation of Secondary Slaughter Products

• The researchers conducted a biochemical analysis of the secondary products that are obtained during slaughter, such as fat, blood, by-products, and intestinal materials. The objective was to explore the potential of these often overlooked components for nutritional purposes.
• The internal fat of the Yakut horse, it was found, held a higher content of polyunsaturated fatty acids (PUFAs) than subcutaneous fat, with the content of linoleic acid ranging from 10.91 to 12.25%.
• A low-temperature method for recovering fat was tested, resulting in a fat-containing feed with a PUFA content of nearly 23%.

Utilization of Slaughter Blood

• Slaughter blood was identified as valuable raw material for producing functional food products with rich content of iron, amino acids, and other essential nutrients.
• The iron content in the blood dried using an infrared dryer ranged from 216.8 to 242.0 mg/kg, denoting a stable level of the horses’ provision with this trace element.
• The protein level in the dried blood of mature mares was found to be high at 87%.

Studying Offal of Young Horses

• The research also evaluated the nutritional content of the offal, or internal organs, from young horses. Organs including liver, heart, kidneys were found to be rich in protein, ranging from 19.1±0.1 to 22.0±0.1%.
• The esophagus showed a high fat content of 22.3±0.1%.
• The stomach and intestines were characterized by a high ash content, ranging from 3.2±0.2 to 8.0±0.7%.

This research illuminates new avenues for making full use of the Yakut horses in Yakutia, opening up the potential to derive more nutritional value beyond their meat and to support a waste-free approach in horse breeding.
