[The content of zinc and selenium in local food products of Yakutia].
Voprosy pitaniia    May 17, 2023   Volume 92, Issue 3 93-99 doi: 10.33029/0042-8833-2023-92-3-93-99
Deficiency of the necessary complex of micronutrients under abnormal nutrition structure creates a problem for the preservation of health and performance of the population. In this regard, it is very relevant to develop a science-based strategy for the consumption of traditional Yakut national food that have a high nutritional value and are able to satisfy the requirements of the human body in micronutrients. of the research was to investigate the content of selenium and zinc in the local foods which are most commonly consumed by the population of Yakutia. . The objects of study were meat (7-...
[Development of fermented milk product based on mare milk and lactic microorganisms association].
Voprosy pitaniia    September 1, 2021   Volume 90, Issue 5 115-125 doi: 10.33029/0042-8833-2021-90-5-115-125
Simonenko ES, Begunova AV.Since ancient times, mare's milk has been widely used by many peoples. Thanks to its unique composition, it is now used in the nutrition of people with allergies to cow's milk, in the technologies of foods for special dietary uses, etc. To expand the range of products with useful properties, it is advisable to develop fermented milk products based on mare's milk. Numerous studies indicate that the use of fermented milk products provides various health benefits. And the use of probiotic cultures in the composition of starter cultures for fermented milk products allows you to add a number of fun...
[New aspects of non-waste use of secondary raw materials of horse breeding in Yakutia].
Voprosy pitaniia    July 13, 2018   Volume 87, Issue 4 87-92 doi: 10.24411/0042-8833-2018-10046
Slobodchikova MN, Vasilyeva VT, Ivanov RV, Lebedeva UM.In the diet of the population of Yakutia, the meat of 6-month-old and local herd horses is especially valued for its high nutritive value, excellent taste and dietary properties. In addition to meat, a number of other slaughter products, such as by-products, intestinal raw materials, internal fat, blood, etc., can be received during primary processing. Many of them are not fully used. The relevance of this work is to study the possibilities of waste-free use of the Yakut horse products. Biochemical investigation of the composition of the secondary products of slaughter (fat, blood, by-products...
[Fat and content of yakutan horse fat tissue].
Voprosy pitaniia    April 12, 2006   Volume 74, Issue 6 17-23
Mordovskaia VI, Krivoshapkin VG, Pogozheva AV, Baĭkov VG.The gas chromatography method the fat acid content of the young Yakut horse meat fat tissue lipids was studied in relation to the age group, various parts of the body and anatomic topographic location of the fat/It was determined that the of sixth-month young horse is the source of the PUFA omega-3 that allows to recommend horse meat as a dietary product for atherosclerosis prevention. By medial chain fat content the lipids of the 6 month young horses are close to the lipids of milk fat.
[The effect of the essential fatty acids in mare’s milk on the function of the immune system and of nonspecific resistance in rats].
Voprosy pitaniia    July 7, 1999   Volume 68, Issue 3 3-6
Valiev AG, Valieva TA, Valeeva GR, Speranskiĭ VV, Levachev MM.The influence of essential fatty acids of mare's milk fat on the immunocompetent system and nonspecific resistance of male rats weighing 135-145 g was investigated after 6 weeks of feeding. Rats were fed with isocaloric purified diets containing 15% of test fat (in control--combination of lard and sunflower oil) which provide the ratio of omega-6/omega-3 fatty acids equal to 0.76. An increase of immune responsiveness and nonspecific resistance in the group fed with the diet with mare's milk fat on day 6 after a single immunization of the animals with 5% sheep erythrocyte suspension was noted.
[Sublimation-dried mare’s milk and the possibility of its use in creating infant and dietary food products].
Voprosy pitaniia    March 1, 1988   Issue 2 64-67
Stoianova LG, Abramova LA, Ladodo KS.The main biological parameters were studied in sublimated mare's milk: protein fraction composition, amino-acid spectrum, fatty-acid composition of lipids and the content of vitamins and mineral substances. A high biological value of the sublimated mare's milk has been proved, as well as significant proximity of its composition to human milk. Preliminary data have evidenced expediency of mare's milk use for the development of adapted milk mixtures for baby foods. However, the fatty component of the mixtures needs certain correction by addition of vegetable oil. The sublimated mare's milk can b...
[Evaluation of the effects of lipids isolated from sublimated mare’s milk on the indicators of lipid metabolism and fatty acid composition of blood plasma, erythrocyte stroma and liver tissue in rats].
Voprosy pitaniia    September 1, 1987   Issue 5 42-45
Valieva TA, Valiev AG, Kulakova SN, Levachev MM.During six weeks rats were given a ration containing, as the only source of fat, lipids of sublimated mare's milk that had been stored with or without antioxidants (quercitrol, bisalcophen) during 3 months. The influence of specific quality of the ration fat on lipids and fatty acid composition of lipids in blood plasma, erythrocytic stroma and liver tissue, as well as on lipid peroxidation in the tissues was studied in the test animals. No changes induced by the lipids from sublimated mare's milk were detected in the parameters studied.
[Physicochemical fat indices and the fatty acid composition of the lipids in mare’s milk and shubath (sour camel’s milk)].
Voprosy pitaniia    March 1, 1982   Issue 2 59-61
Orlov VK, Servetnik-Chalaia GK.Physicochemical properties of fat and fatty-acid composition of mare's milk and shubath (sour milk product obtained from camel's milk) depend on the season. During summer these products show a higher content of fat and increased level of polyunsaturated fatty acids, particularly in mare's milk lipids. It has been shown that in mare's milk lipids 90% is due to acids with a carbon chain of C14-18, while shubath lipids contain almost 96% of such acids.

[Nature of the vitamin composition of mare’s milk and koumiss depending on the time of year].
Voprosy pitaniia    July 1, 1981   Issue 4 46-48
Servetnik-Chalaia GK, Mal'tseva LM.It was shown that the content of vitamins E, C, thiamine, riboflavin and niacin in mare's milk and kumyss varies depending on the season. The highest level of vitamins E, C and niacin was noted in May-June. The technological processing of mare's milk leads to the decreased content of vitamin C and niacin. Mare's milk and kumyss were found to contain dehydroascorbic acid in a considerable amount, especially in summer.
