Evaluation of indigenous lactic acid bacteria of raw mare milk from pastoral areas in Xinjiang, China, for potential use in probiotic fermented dairy products. In the present study 114 lactic acid bacteria strains, isolated from raw mare milks from pastoral areas for ethnic minorities in northwest China, were screened for probiotic traits, and their characteristics were compared with those of Lactobacillus rhamnosus GG, a commercial strain. Behavior, milk yield, and milk composition of machine-and hand-milked Murgese mares. A 25-d trial was performed to assess the effects of machine and hand milking on behavior, and milk yield and composition of mares; the trial involved 8 Murgese mares. Milk yield was higher (7.69 vs. 4.91 kg) and milking time was shorter (1.80 vs. 5.40 min) in machine-milked than in hand-milked mares. Isolation of kappa-casein-like proteins from milks of various species. Kappa-Casein-like proteins were isolated from the milks of cow, goat, reindeer, horse, rat, and rabbit. When treated with rennin, all of the isolated kappa-casein components yielded para-kappa-casein-like bands on gel electrophoresis. The rate of cleavage of these components with rennin was determined by measuring material soluble in trichloroacetic acid (macropeptide). Heat stability and reactivation of mare milk lysozyme. Mare milk and aqueous solution of mare milk lysozyme were incubated for variable times between 30 C and 100 C at pH 3, 6, or 9.
