Palatinose, also known as isomaltulose, is a disaccharide carbohydrate composed of glucose and fructose. It is derived from sucrose through enzymatic rearrangement and is characterized by a slower digestion rate compared to common sugars.

In equine nutrition, palatinose may be used as a low-glycemic energy source. Its gradual breakdown leads to a slower and more sustained release of glucose, potentially reducing spikes in blood sugar and insulin.While palatinose is not widely used in traditional equine feeds, it may appear in specialized formulations or supplements.
