Aspergillus oryzae is a filamentous fungus widely used in the fermentation industry and animal nutrition. It is traditionally employed in the production of fermented foods such as sake, miso, and soy sauce, where it functions as a microbial starter culture. In equine and livestock nutrition, Aspergillus oryzae is typically included in feed products as a direct-fed microbial or source of fermentation extract.

In equine feed formulations, Aspergillus oryzae fermentation products may be used to support digestive function. These products may include enzymes and metabolites that can enhance fiber degradation, potentially improving nutrient availability in the hindgut. The organism itself or its fermentation extract may be included as a feed additive to help maintain microbial balance or promote feed efficiency.
